The difference between catching one fish at a time on a line and hauling up 5-20 tons of fish onto the deck is that you ensure minimal impact on the seabed. Likewise, the fish sustain fewer injuries and undergo better bleeding, resulting in line-caught fish being whiter and firmer in flesh.
With hook and line, the fish come on board alive. Shortly after being caught, the fish are processed and frozen at sea to ensure the best quality and freshness. The fast process from catch to freezing maintains the meat's structure and texture, and it encapsulates and preserves the fish's natural vitamins and minerals.
